Adjustable regulated power supply

Hy,

I have a +/- 30 V big transformer. I don't know the wattage but the secondary is made with 1 mm. wire so i guess that is pretty powerfull.

How can i build a regulated power supply to give me +/- 35 v or +/- 40 V

Any schematics, advices and/or links.
