Since the wall plate is non-conductive, they did not need insulating washers. Once you remove them from the plate you will have to find a solution for insulating them from a metal case. Are those RCA jacks any good? Are they worth the trouble?
I often see people excited about saving money on items that aren't really expensive compared to the final cost of the device they are building. I have been using Neutrik brand parts for almost 30 years and never had one fail. Parts Express has an RCA jack mounted on a D-flange for $4.25.

Those McMaster Carr insulating washers don’t have a step feature that would ensure no contact with the sides of the opening in the case/panel. After the extra hassle of buying all of the above, then discovering that it won’t work as intended, you just might wish that you had bought something more appropriate instead.

I have a pair of those wall plate rca jacks, will be fine if I ever make something with a plastic case. Hasn’t happened yet though, and they are still in a drawer.
 
You can mount them on a PCB, unclad FR4, an isolated strip of metal, etc. Not everyone can fork out $8 a pair for RCA's, many must scavenge or buy cheap and adapt or not build.

Seems like a pretty good deal for those with more time than money.
