I use a little 1-2watt tube amp that I really enjoy, but only my line arrays give me the headroom I need because the amp puts out 4-6 watts into 2 ohm loads and it likes it.
I've seen a number of drivers that are available in 4 or 8 ohms. Is impedance something that can be easily modded by a DIYers? If so, how?

Hi John,
If line arrays aren't doing it for you, vintage Saba 19-200 greencones come to mind. They are nominally 5 ohms with efficiency in the mid/high 90s and Qts around 0.7--great for OBs.
I recently bought a couple pairs of them and a pair of the matching greencone tweeters, but I haven't had a chance to play with them yet, so I'm not personally endorsing them just yet.
My plan is to arrange them MTM on OBs, lowpassing the lower one 1st-order to compensate for cancellation losses. At lower frequencies, your Zen would love this setup's 2-2.5ohm load.
These drivers aren't super cheap, but they've got a strong cult following, and you'll likely be able to sell them for the same or more than your purchase price.

P.S. as to changing driver Re, you can always add to it with series resistance, but you can't lower it short of rewinding the VC.
