I have a pair of 300B EH tubes which I would like to use so I am thinking to repurpose the chassis and power supply for new build.
The goal is decent amplifier, not crazy hi-end stuff, let's be realistic here. So my main question is what would be the way to go: can I reuse the output transformers? What to choose as the first stage?

You could, but that would be it. They aren't good quality transformers, which is what you want for a 300b amp.can I reuse the output transformers?
The power supply would be useless for a 300b amp. For starters, you need a dedicated 5v filament supply for the output tubes, as they are directly heated (DHT). You're much better off buying a kit, and leaving your EL34 amp intact. Just my 2 cents.

They also sell a 300B version of the EL34 kit: same chassis and output transformers, 6SN7 driver tubes, and a different, larger power transformer with higher HT. The chassis output tube holes are enlarged to fit the 300B sockets. So the conversion is possible, but probably not worth it.
Do yourself a favour, and build something like the tubelab TSEII - you'll get lots of support here, a BoM from Mouser etc, and most importantly of all, proven good sound. The downside of course is that you need to make/buy your own chassis....

Build this amp with the EL34s if you need to see how an amp goes together, but don't try to fool yourself into believing there's a good 300b amp hiding in there. I know it's hard to wrap your head around the idea, but a good SE amp has well over $1,000 of parts in it. High Quality output transformers, good, expensive caps, nice components, and a good non-magnetic chassis; they add up.
also, 300b has directly-heated cathodes, so you'll need 2 separate power supplies for the output tubes. no room for that in this little chassis.
