I just got my new DATS V3, installed the program, and hooked up the device. It is properly detected in Control Panel/Sound, but the DATS program starts then immediately closes.
No other audio programs are running, and I've tried all compatibility modes. Here's the system:

Any ideas, or will this just not work in Win 10?

Try compatibility mode for an older version of Windows.
Or ping their support mail.
Also see the RAM needed, that may be an issue.

I've tried all compatibility modes, Win 7, 8, Vista, XP and in Administrator mode for all. No go.
32gb ram, so I don't think that's an issue.

I dug out an old laptop on Win 8, it works fine on that.
An internet search shows a significant number of similar experiences, this unit should not be advertised as Win 10 compatible. When it does work with Win 10, it's a fluke!
I'm also not impressed with all the bouncing around of vendors; sold by Parts Express but shipped with a dead link for support (https://daytonaudio.com/dats), Dayton Audio page bounces you to TrueAudio.com. I think this is a soon to be orphaned product.

All three Win 10 systems are 64 bit, DATS will only run on the Win 8.1 machine which is also 64 bit.See if Win 8 is 32 bits, and Win 10 is 64 bits.
That just might be the issue.
Try it on a Linux live CD....maybe some software issue.
Really stupid and irritating, a fault like this, that too from a maker with such a high reputation.
Also, Windows progressively added built in anti piracy features into Win 10, as it is rampant in many countries.
Changing those settings may work, or trash your PC. Not a good idea.

Might be a missing prerequisite ?
Some programs need dot net framework ?
Or dot net core ?
However, usually newer Windows versions tells you and installs it for you.

I'm quite sure this is NOT about to be an orphaned product. Dayton Audio is the house brand for Parts Express. John Murphy of True Audio worked with Parts Express/Dayton Audio to develop this which is now in its 3rd version. Parts Express customer service is excellent, call them. Or post your issue on the Parts Express Tech Talk Forum and John Murphy checks that sometimes. Not sure, whether you found a solution on the issue about DATS, but might have cracked the shell after days of frustration myself.

Some programs seem to block the startup of certain other programs. In this particular instance, either Logitech Gaming Software, Nvidea GeForce Experience or Samsung Magician was blocking startup of DATS. When closing the programs from "Show hidden icons" (right corner), DATS v3 starts flawlessly. Not sure why, but this works for me.
Same issue DATS v3.16 crashes after starting. I found the solution. The problem is Samsung EasySettings. Very bizarre conflict between DATS.exe and EasySettingsCmdServer.exe

I'm currently using DATS V3.0 with Windows 10 or 11 I don't remember. Whichever isost recent. It works fine, but I did have a different problem. I went to Parts Express and posted my problem in the Q&A section. I got useful recommendations from the Parts Express team, though they took a few days to respond
