Yup, living cells are somewhat capacitive as cell membranes are insulating - hence the FR. The conductivity is quite good though as vegetables have vessels for carrying nutrients around, these are effectively wires as they contain fairly conductive liquid (i.e. salts).

Distortion is very good - I suspect if you used higher signal levels you'd hit a point where electrochemical potentials were exceeded and distortion would start to rise up.

I wonder the history of things like AIR on mic pre-amp, was it to compensate for microphones that didn't go to 20KHz (many large condensor mics)
