the V1 position in my Mcintosh MC-2000 only converts the balanced input to an unbalanced signal with 0 gain.
Does the 12Ax7 still have a sonic influence?

If your asking how non-linear the circuit is then the top tube has a lot of NFB, and the bottom tube is just a follower.
Perhaps the block diagram help to understand my question.

Unlike what valve sellers like to tell you valves don't exactly have sonic influence - they add distortion. Most 12ax7 will obey the datasheet so they will have pretty much the same distortion. They may differ in terms of reliability, noise performance and some may be more microphonic or even crackle.
If I was using say a ECC88 in a phono input yes I would try a few.
No I would not be worried about which 12ax7 you fit here.
