I'm just finishing upgrading my Quad 33 via the Dada website instructions and I'm just wondering what they mean by 'shunting' resistors with a 180pf cap? And would I need to do it on all resistors? Please see attached image for their instructions.

Shunting a resistor with a capacitor means putting them both in parallel.
No, it applies only to R101/2/3/4, as stated. The exact capacitance required depends on your cartridge.
