More rare and people say they sound better. I have both versions, copper and graphite plate. As I have seen, there is also third version, early one with iron plates.
I have been searching, and so far the only meaningful bit I found is mechanical, where the anode wire can be soldered to the copper anode, but needs to be mechanically connected to the graphite one, resulting sometimes in a noisy connection after vibrations.

Copper plate maybe better midrange, more lush, but graphite plate better all-round. Dynamics and bass ... to me!
