What are you trying to do? You want each channel to be set up for either TRS or XLR? Those letters refer to XLR pin 1,2,3 and ground. And the others are TRS for tip, ring, sleeve, and the N by each refers to its "normal", an official term for the cutout contact at each. For snake, I wouldn't wire the normals.
Out of 8 channel stage box, 6 will be regular female xlr mount and 2 will be hybrid. Hybrid will be used mostly for plugging instruments and rarely mics if needed.
So I should go like..
1- Ground
2- Positive
3- Negative
And, link 1,2,3 to S,T,R respectively?

Yes, 1,2,3 is ground positive negative, and yes on TRS
A cutout or normal is a normally closed contact added that opens when a plug is inserted. The most common use is in a zillion guitar amp input jacks. It is there used to short the input to ground when no instrument is connected. Just because it is there does not mean it must be wired to anything.
Cutouts are also used in things like mixers or amp FX loops. Insert jacks use them to carry signal past when not being used.
