I have a Yoshiba 50 SET amp and it has pots across the heaters on the output tubes. I am assuming these are hum buckers and my question is how to adjust them? I guess they could also be for cathode biasing, but I don't know enough to be sure.
Do you just turn them up until the valve emits hum and then turn back a bit, or is it more complicated than that?

Yes, it's a hum balancing adjustment. There will be a certain point near the middle of the pot's range
where the hum in the speaker is at a minimum, and higher on either side. Find that point.
