Hopefully this is the right forum for this but I am looking to build or buy a flat IEC power cable as I need to plug it into an outlet inside a cabinet and run it under the glass cabinet doors to my speaker's power supplies. I looked all around for a commercial solution but was unable to find anything but I assume someone has built something similar using bulk ribbon cable or something like that. Any tips or advice? Thanks in advance!

Don't do it. Least of all with a ribbon conductor and diy insulation. Find a way to use a standard power cable with the correct power and voltage rating.
On multi-stage well pump motors they usually use flat cables.
There are assembled ones.
Dell F2951 / 0F2951 3-Prong Flat/Straight Power Cable 3ft
Door rubbing against the cable could pose problems.
Can't You pass the cable thru the back or the side of the cabinet ?

Does the cabinet sit on a plinth/toe-board or could it be sat upon one ?
Then you could take the cable out downwards and through the plinth.

They make em every day. Get a cord for a kettle.

Ribbon cable isn't mains-rated. Mains cables have to withstand kV of switching or lightning transient, that's why the insulation is thick.
If you buy a mains rated prebuilt cable as shown above, also get the proper grinding wheel (diamond?) and grind/cut a notch on glass door edge so it never ever even touches wire insulation.
They are flat as in side by side on the same plane but not "thin".

On one side I can, on the other I cannot.
Sorry I meant can't You drill holes to pass the cable ?

That's not a flat cable as a ribbon type with thin insulation would be; it's slightly flattened (oval-shaped), and that's fine. Insulation looks adequately thick all around it.They make em every day. Get a cord for a kettle.
