Balanced to single ended Transformer

Are you looking at the MXL series?

For balanced to single ended, I would connect the balanced to the primary. Plus to plus. Minus to minus. Ground the centre tap (optional). Then take the output between the plus and minus on the secondary.

Commonly, 4 V is used for balanced signalling and 2 V for single-ended. If you're interfacing from 4 V to 2 V, take the output from plus to the centre tap on the secondary. That's technically a 2:1 connection.

It would be interesting to know which series and impedance was ordered.

Usually though, if you bought e.g. a 10k : 10k transformer, this will be referring to the entire input or output winding, between (+) and (-).
If you involve the center tap, you can also obtain 2:1 (10k : 2.5k) or 1:2 (2.5k : 10k) transformations, or even a 1:1 (2.5k : 2.5k). Reverse (+) and (-) on one side for phase inversion.
