I got some Monoprice xlr to rca cables would this work fine going from the Behringer amp to the mini dsp's rca's?

Bit of an overkill but it will work. Don't waste you money!
I use standard microphone coax with Neutrik connectors. 1/2 of the cost and possibly no difference in specification.

Gold plated connectors is always worth paying more for, non-gold connectors can become temperamental over the years, and frequently do in my experience.
doesn't it depend more on environmental conditions and handling?
if you regularly futz with patch cables while eating a greasy chessburger or smoke around your gear then even gold plated connectors can become glazed over and develop corrosion, that's probably an exaggerated circumstance i'm creating but i'm like Jon in that less expensive cables can give good service/ performance without undue expense.
