I have a pair of Mordaunt Short Aviano 1 speakers but I want something with more defined bass. They are 2-way with a 5” driver. I would like to use the driver and tweeter in a DIY 3-way speaker. I was thinking about getting 7-8” woofers and 3-way crossovers. I could make a heavy plywood cabinet at work fairly easily. I can’t find any worthwhile specs for them apart from they recommend 15-100w amplifiers.
What size and power woofer should I be looking for? Any recommendations for the crossover?

Another solution is to put a 2-3" midrange and start from here.
You can discharge the tweeter from the waveguide as it isn't needed.
Reworking the new 3 speakers is already a big task.
Putting a midrange and relieving the midrange frequencies from the mid-woofer unit will make the m-w a bass unit, so a little bit less efficiency from it is expected ( you tilt the bass, you lower the midrange).
I reckon those Mordaunt Short model, I have seen one pair really abused: the woofer was deformed from the heat of a survoltated voice coil that nearly melted it!

Another option would be to build a 'stand' for the speakers the same width but deeper and mount a 10 or 12" speaker in the side of it, using an active xo crossed around 200 / 300hz. Think of it as a 'kick bin' if you like.
I don't know if you're using subs. If you are I'd look at pro drivers in a sealed cabinet. If not using subs maybe a hifi driver in a ported cab might be more suitable.

I didn’t want a speaker that big. I found a Dayton DC165-4 6.5” 4 ohm 100w rms speaker and a Visation 600/6000hz 3 way crossover. Would that work with the Aviano 1 driver and tweeter?
I can't see the point of trying to get 'better bass' by going to a driver of similar size ?
The crossover will be useless, you'll need to measure all 3 drivers in box and design a 3 way from scratch. (that's why I suggested an active xo, a lot easier to do as you keep the existing mid/tweet passive and just apply an active highpass to it, then blend in the new bass driver)

The problem with that crossover is that the components aren't matched to the drivers you've got. The simplest way forward is to add a .5 way woofer (i.e. your DC165-4) in an appropriately sized & tuned box, connected with an inductor, sized to cross over at the baffle step frequency. (115/baffle width in metres)
Things to consider: Impedance: you don't want the resulting impedance too low, or your amplifier is history, so using an 8 ohm woofer is safest
Sensitivity: The added woofer would ideally be ~ 3dB more sensitive than the Avianos, to give a moderate amount of baffle step compensation to make the bass solid without making it too overpowering. The only spec I could find for the Avianos was 88dB (in an ebay ad), so I'd pick a woofer with 90-92 db sensitivity...

But more work than most people would take on, for sure.
A three way is an entirely different animal, and a mid bass is not the same thing as a midrange:
