I would need to see the circuit in that case to see what the resistors do but if they are fixed resistors then I would think going from 100 to 110 or 110 to 100 should not cause any big problems.

That is right. The resistor is in parallel with the preset resistor and so you have all the adjustment range you need.
The difference it makes is this.
With a 100 ohm you have a total adjustment range of zero to 75 ohms.
With a 110 ohm you have a total adjustment range of zero to 80 ohms.
