I've just finished building an objective 2 amp (first soldering project) and have come across an issue with volume levels being extremely low when using RCA input. I've tried re soldering but haven't managed to fix the issue yet. Volume levels are normal for the 3.5mm input. I've attached a couple images and if someone could point me in the right direction that would be great.

You haven't cut the ground traces under the O2 PC board under the 3.5mm input jack, between where you have the red and white wires soldered on in your 4th photo. Those traces ground the inputs when the 3.5mm plug isn't inserted. If you don't cut them it grounds your RCA inputs.
