To all my Mexican friends, on this day of celebration. May 5, 1862, the day the Mexicans repelled the French in the city of Puebla. It was the last time a nation from off the continent invaded the Americas.
We will be celebrating with traditional dishes and garb, (no, not tacos) music and dance and remembering how lucky we are no matter our current conditions. I hope you do the same.

Geez, I haven't gone here for a while. Anyway, for all those who celebrate, have one for me too. Time to get the food underway.

Ya, I realize that outside of Puebla, there's not a whole lot going on except a little north of the border, now go one border further and voila! Canadians who give a ***k about something a long time ago in a place far away. I like the Samson and Goliath part of this. To the ancestors of those who stood their ground, I say Salud!
Tonight includes only the dishes I have done before + or -. Forgive my spelling.
Chile Rellenos, veggie style
Spanish rice
Toasted whole wheat tortillas for dipping into:
Guacamole
Salsa
Black olive somethingorother (not sure yet it's only 3pm here)
Refried beans (This comes from a can. I have no idea how to make it.)
Ground beef (not hamburger) somethingorother. Again not sure yet. That's how I work. If it's something to brag about, I will post it in the food thread.
