To the OP - it's more about getting linear response from a given tube stage. In my opinion, simpler tube designs (with fewer internal components) tend to sound better even though they may not measure as well as more complicated tubes.
The selection of tubes may be less important than building each stage for best response.
That typically involves heavy transformers. Mating these together approaches art: it's not a simple recipe.
I would advise beginning vacuum tube buy tubes that are still available.
I have an amp that I love which uses output tubes I can't replace.
