Sorry if I wasn't clear, I'm looking to get PCBs made of this project, CharlieLaub's
4-channel gain stage, using his Gerber files.

Ok, then if you only want one or two, a group buy might be best. If you need a larger number of them,
then the pricing should be reasonable. For small orders, you usually have little choice for the board specs.
The Laub board has only 2 layers, so just go through the quoting procedure for the board house
that you decide to use. There might be a couple of options to decide about, but that's about all.
How many boards do you want? Bear in mind that the board is new, and you may want to talk
with someone who has built and tested it first. There may be issues to correct or modify.
Also, many check pricing at several board houses before ordering, since pricing can vary significantly.

layout using 1layer, until you can't easily get any remaining traces to link.
Then look at introducing a 2nd layer and finding which traces can be easily moved to the other layer to allow the missing traces to be routed.

If you can get all traces linked in 2layer layout then you don't need 4layers.

If you are working at very high frequencies, then you may have to introduce power planes and power ground planes and maybe a signal ground plane. That instantly takes you to 6layers.
