Not with a regular pot. About all you could do without replacing the pot
is to add a index under the knob.

No, you can't.
Audio frequency is a.c not d.c.
Not all the a.c voltage meters are ideal for this.
This is a job for a VU meter.
The easy way... use a stereo potentiometer in a mono input.
Place a known low level d.c across the unused potentiometer.
Connect the d.c meter between the 0v and the wiper.

I will have to dig and see what the maximum current is for the relay drivers... I will see if I can find that. My inclination is that it's probably way too much for one driver. The only other option would be to create new firmware that can drive multiple driver boards (they each need to have their own address)
I would use three volumite/drivers for 6 boards.
Could you explain how the 3 volumites would be wired?
GND and VCC connected in parallel?
