Can I mount a tube socket to the chassis, remove the socket from the PCB and
solder wires from the chassis mounted socket to the PCB?

Yes, but keep the wires short. Twist the heater wires, and keep the grid connections
very direct and away from other wires. If you are using a grid stopper resistor, use
that for the connection from the board to the socket's grid lug.

Of course you can only need to take care of wires lenghts and couplings between filament and the other cable, it can be source of noises that can be related to oscilations and hum coming through the speakers if care is not taken, there are tubes that have a certain suceptibility to that, some others won´t, just try to separate or shield the cables with high impedance nodes as grids, and anodes, and twist heater wiring if it can be possible.
