8K would be preferred; but 5K will also work fine. I doubt a difference can be heard between the two in either distortion or output.
If your OPT's have ultralinear taps, I would use them. I also use cathode feedback.

Looking to use a smaller PT with lower B+ and found this fairly recent experiment: http://www.r-type.org/pdfs/6v6-se-ul.pdf
I am interested in the 275V B+, 250V plate, ~390ohm Rk and 5K OPT load line. Given 275V B+, are there any further changes you're aware of beyond replacing R14 and R24 with a jumper? |

Tubelab SE: Removing MOSFETs? there is considerable information about using the SSE at lower than designed voltages. You should probably read it if you are going to go that route with an SSE. It should be helpful to you.
