Yah I’ve seen places that cook your own fish/game but had no idea it went out as part of the menu........I know quite a few people who I don’t accept free meat/fish from due to their lack of sanitary handling/processing. (That’s putting it nicely)
My butcher does all the processing after the shooting bit ie hanging, plucking, gutting etc. Exactly the same as he does with all his other meat.
He buys directly from the farmers. They deliver to the abattoir and he picks the carcasses up from there.
Royals are pretty useful...to test guillotines.
