I toured a major brewery and recall all its beer with the exception of draft beer was pasteurized but that was years ago.

Curiously I would have expected Osso Buco to be more expensive but it isn't.

Osso Buco is veal and it's over the top expensive these days.

There's no marrow in oxtail which is essential. Oxtail cooked in the style of osso buco is just that.

Osso Buco is veal and it's over the top expensive these days.

I thought about this over night. My view (at least from Italian friends) was that Osso Buco was a more prized meat. But then I realised that, (at least in the uk) Rose veal has become a thing so the supply should be higher.



Then I realised that the bulk food market is all messed up anyway and I shouldn't overthink it!

The exact osso buco cut with the big marrow bone is $40 a kilo or more here.

Osso Buco cut from wild shanks of deer, moose, elk etc. is delicious and the price is extremely low, in my experience (pennies per pound). It helps to have a decent recipe and the right cookware.

I had a post that never appeared, it is true ossobuco translates as bone with hole and any shank sliced so the marrow is there qualifies.

Gerhard, a habanero-marmalade sounds very daring, but it could perhaps taste nicer if you had mixed a bit with a homemade orange marmalade + finely chopped raw sour-apples.
