Stability of this circuit depends on input cap, output cap, parasitic inductance, and transconductance of the FET, but not threshold voltage... Although since there is no feedback the output voltage will fluctuate with temperature which may not be practical...

How about if that circuit sees a rapid increase in current demand, for example from 1A to 10A when there is a Vds of 10V. Junction temperature rises very quickly, threshold voltage drops very quickly also, giving a positive feedback mechanism that's unstable.
