Linear power supply - two windings or linear voltage regulator

A bit I left out in my initial post was that the 78S05 feeds a pair of 2.7V, 360F ultracaps (or supercaps). I'm depending on the caps to take care of any noise from the 78S05 stage.
If I can get away with less than 2A (I think I can but need to measure), then I may try a lower noise reg and see if it makes a difference.
I've started to use PS's based on these huge caps so I can get away with using a simple regulator, vs a superreg.

A drawback to these caps is you have to worry about heat and current draw while charging the caps up. I mounted my 78S05 on a decent size heat sink, and was using a fan to blow air on the heatsink while the cap charged.
