Here is the circuit outlined earlier, cleared of unnecessary elements.
The capacitor's value should be suitable for this level of power and the diodes can be 1N5408.
Note that the DC current on each rail cannot exceed 800~900mA, on the condition they aren't too unbalanced.
If they are severely unbalanced, expect half of that

Do those simulations include any source resistance?
No, and including the real transformer's impedances would mitigate (obscure?) the issue.
But the fact remains that it is a lame solution, which is best avoided.
The two-rectifier bridge solution is much better and requires no derating.

If two diodes are added, it is preferable to place them in series with the stronger winding.
Things begin to look almost normal:
