Voltage coefficient would be the change in capacitance vs. voltage. Some ceramic caps change a lot (like 50%) others like NPO change very very little. The cap you found is .001 uF. The problem is that the NPO material makes a much larger physical cap for a given value. There are other compromises between materials you should look at but you will find much higher distortion which will show up in the output.
