Help explaining SMD Vs. Thru-hole measurements

Hi-K ceramic has several meanings, for semiconductor manufacture it doesn't mean ferro-electric (which is what you are really referring to, ferro-electric ceramics like barium titanate are the highly non-linear materials)

Note that ferroelectric values of k can be up in the 1000's or 10000's region, compared to most ceramics are 4 to 15 range.

The SMD capacitors being used are certainly not polarized.
I am not familiar with what a voltage coefficient is and what its effect is on a load.

I did find these capacitors at Digi-Key. Are there ratings I can use to compare the voltage coefficient between parts?

Voltage coefficient would be the change in capacitance vs. voltage. Some ceramic caps change a lot (like 50%) others like NPO change very very little. The cap you found is .001 uF. The problem is that the NPO material makes a much larger physical cap for a given value. There are other compromises between materials you should look at but you will find much higher distortion which will show up in the output.
