In parallel mode the device is setup using a number of pins all available at the same time i.e. accessed in parallel. In serial mode the device is setup by loading internal registers in serial usually with a microcontroller. This only needs 2- 4 pins. Because of the number of pins needed, fewer options are available in parallel mode.
