Hi elnec,
I'm not quite sure what you are after. But if it's a free-standing HD I would go for USB. Search the TI website, they have some nice USB-interface chips. If the TI chips don't support I2S you will need to go via SPDIF.

Why not using the existing solutions, numerous hard drive/network players, mostly based on linux? I kind of do not understand the question. If chips on the sound card (PCI, USB, PCI-e, FW) expose I2S lines, it is just a question of tapping them and transfering somewhere else via some proper channel (e.g. LVDS).
