Apparently you can fry the component if you heat it too much so it's best to solder the joint quickly, I've read a 25watt iron is reccomended but somewhere else said it's temperature not wattage that counts?
Basically, would it be better to get a (probably low-budget) variable temp. iron or just the 25 watt-er? I'm just using it for PCBs for the near future

It's been many years, but I remember that using clip on heat sinks for germanium devices was an almost universal rule. You need a high enough temperature to make a good solder joint, and no more, but that heat can't get up the lead. There were little spring loaded aluminum clip, or many people used hemostats.
