Are class D amps limited to using MOSFETs for the power stage or are BJTs acceptable too?
I'm having trouble wrapping my head around MOSFETs. So, additionally, if you could point me in the direction of a newb friendly tutorial on MOSFETs I'd appreciate that too.

I think I found my answer.
PWM Class D Basic Operation
First paragraph. MOSFETs have the advantage of low saturation voltage and so are preferred. However, BJTs can be used.
