An LM1876 based amplifier is a well playing option. This one has two channels in the chip.

Are there any chip/pcb's that are rated for single channel 4 ohm, but with two outputs? I'm reading that you can connect two 8 ohm speakers to one 4 ohm chip?

I advise you the modest tda1552q , 2 channel BTL 17w/4ohms . Have a look on YouTube ,numerous serious audiophiles examples , even compared with PP EL34.

Indeed you can, and if the chip is 2ohm capable you can connect 4 such speakers. TDA8566 is 2ohm capable.

Was able to get a hold of 2 more of the same speaker, so that would work great! Do you know of any pcb's that would have 4 outputs for that chip? Not big into designing my own board...
