I have a Sugden A21 SE signature. It has had a transformer since the day I bought it. I’m curious what may be some options to either replace or, ideally, upgrade the transformer. What would be a good upgrade? May change the pot out while I’m in there too.
I bought it new, so it’s under warranty and with some pushing I should be able to convince them to take it into the shop. Although, when I brought up a year ago they tried to convince me the hum reasonable. When I first received it, the amp had lose connection from shipping (not the transformer),that required I ship it across the country- I’d really like to stop shipping this giant thing around! Plus- I like to tinker and I like the idea of upgrading the amp further.

As a generic type of answer you need to measure the dimensions (H and W) and also measure the onload secondary voltages of the transformer fitted. I'm assuming the transformer is a standard dual secondary type and that is does not have multiple extra windings.
That is your first step and should get you in the right ballpark for suitable VA ratings. Also the weight of the transformer is useful in sizing them.

I would leave it alone, especially if it is under warranty - no amount of "tinkering" will realistically do anything except destroy a perfectly good amp (either literally or in terms of resale value).
If the transformer is humming, then I would focus on finding out why it hums. If you can build/buy/borrow a DC trap that would be good first test.
