I need one of those cheap displays for my rpi project.
But my enclosure is only 50 mm and that LCD height is 60mm. So I'm wondering if I could split the LCD from the pcb and using some wires to connect both parts again.
And since I don't have it right now I want to ask if someone is familiar with the LCD can tell if this possible.

No, it is not possible to split it.
The display is connected to the board by rubber conductive strips.
BTW the Winstar display I have is only 53mm hight, not 60mm.

Sure. if it is as wolfthegrey says about the connection then it is hard. But if you have solderable lines then of course you can use wires.
