A lot of Country Music CDs are actually released in HDCD format, but very few of them are marked. (I have a few by Toby Keith, Faith Hill and others in HDCD format, but no longer have the hardware to decode HDCD) Generally their production values are a lot better than for pop/rap/hiphop recordings.
You could try Hayseed Dixie.
Not HD but no eq, no compression and no mastering has been used at any stage. Just well placed german mics feeding a canadian digital recorder (iZ RADAR) through a british console or high-quality mic pres. They are some of the best sounding cds I've come across.
Great musicians well recorded. The Tone Poem cd's (3 of them) with are musicians playing classic acoustic instruments, many a hundred years old recorded to allow the listener to hear the quality of the different instruments involved. There is a booklet for each cd with information about the different instruments used on each track.
