I'm fairly new to speaker amplifiers but I understand the different classes (i.e.: Class A, Class AB, Class D, etc), but how would I identify the class of an amplifier, for instance if I was buying an amplifier online and the class was not mentioned, how could I know the class of the amp?

The amplifiers technical description should state the operating class. If it doesn’t, assume it’s Class D (generally speaking).

Just by looking, compare the rated power to the relative sizes of the heat sinks.
Low power/large heat sinks = class A
high power/large heat sinks = class AB
high power/small heat sinks = class D
Low power/large heat sinks = class A
high power/large heat sinks = class AB
high power/small heat sinks = class D
