I'm looking for a three way amp with crossover and DSP for HiFi home application (a quite big open baffle spaker): which one will you recommend ?

I own the Hypex Fusion 503. I run my open baffle speakers 2x12" 1x6" and an AMT1 on them and I am pretty satisfied with them.

I have looked myself and have found multiple options. Hypex plateamps are cheap and contain all the necessary parts for the cross over. Plate amps and open baffle do not mix that well IMHO.
You can also build two three channel amps with Neurochrome Modulus 86 modules. You still need to do the cross over either yourself or buy something like one of the MiniDSP solutions. Less cheap but more DIY and easier to let is optically disappear.
A third option are Purifi amplifiers. The best of it's class and relatively expensive. They will provide bass control like no other amp and you could make an all out expensive but completely digital path with miniDSP 88D and an 8 channels dac like the Okto Research dac8 Pro.

Just an aesthetics opinion. There is no box in which to mount the plate amp. You do not want to put it at the back. It is quite odd to mount it up or downward facing. A separate box makes most sense but then there are better options, not that much cheaper though.

Thaks for your help, but as I am not an expert, I'm looking for a all-in -one system ... It is too difficult for me to assemble it by myself !
