I picked up a few 2 value motor run caps. One lead says "fan" and the other says "Herm" and then there's common.
I'm guessing "fan" is the smaller value and "herm" would be the bigger?
I came to that conclusion because I'm thinking maybe some motors have a separate fan motor. So, the fan would need the small value, and the big motor would need the large value.
Is that correct?

I guess so... I found this:
"Rule of thumb on wiring the capacitor is: Herm on capacitor goes to the start winding on the compressor, Fan on capacitor goes to brown fan wire that goes to the fan, and Com on the capacitor comes off one leg of the contactor to provide power to the capacitor."
For an air conditioner...

I'm afraid that it might be a combo of motor run and motor start in one case. I hope not!
I found another article that says fan is for the blower, and herm is for the compressor, so that sounds promising.

herm is short for hermetic compressor. the fan connection would go to the condenser fan motor which is always a much smaller motor than the compressor
These are dual run caps for an air conditioner. As stated earlier "fan" is the run cap for the fan motor, and "herm" is the run cap for the comressor. The compressor is HERMetically sealed. I have used them in tube amps. I just wired the fan and herm terminals together which puts both caps in parallel.
