"You can operate this one balanced for about
70 watts into 8 ohms with even lower distortion. "
I find this sentence in the documentation of Zen Variation-Part3 --- Outro
Does it mean that I can connect two Zen in balanced mode like SOZ?

If balanced operation of Zen Variation-Part3 is possible, can I remove output capacitor?
How can I modify Zen Variation-Part3 circuit fit to balanced operation?

Which one will be better between SOZ and Balanced-Zen?

Yes. Just invert the signal one amp input and use the active output (-ve on the schematic) of each amp.

I am not 100% sure on this but i'd tend not to do this as there will then quite a bit of dc at the input which might flow back into your preamp.

Just make 2 and feed each one from it's own signal

I'd tend to use the Penultimate Zen in balanced mode rather than SOZ as the efficiency is something like an order of magnitude better and with the addition of the aleph current source and the input buffer that is yet to come, i would anticipate that the quality of the audio output will be quite good indeed.
