is there a definitive guide to using a 'scope with tube amps
particularly for tracking down noise

Tektronix has a very complete guide to scope usage on their site. For tube amp specifics, I'd recommend Morgan Jones's "Building Valve Amplifiers" which has a pretty thorough examination of scopes and tube circuit troubleshooting.

When I used to use a scope that itself was built around valves, I appreciated the vertical 50V/div. Nowadays I make do with 5V/div. An attenuating probe for me is essential.
