Can you make a +/- supply with valve rectification ?

Of course! Electronics was around long before the evil silicon arrived. You simply make a bridge rectifier. The problem is that although one pair of diodes has a common cathode (allowing you to use EZ81 or GZ34), the other pair have their anodes connected together. Therefore, you need individual diodes and extra heater windings. EY84 is a possibility, as are any of the TV efficiency diodes.
