I'm a little lost about which amplifier could build over 30W-50W, with Lundahl output or similar perfomance.
Some very good design, I am looking for high quality first of all.

High quality O/P "iron" definitely brings "classic" Williamson style circuitry into play. Mullard style circuitry is a 2nd "classic" option. Perhaps the best "vintage" implementation of Mullard style circuitry is the Harman-Kardon Citation V. Very good, to begin with, and can be tweaked further. Carry the high gm theme further by using an ECC99, instead of a 6CG7, in the LTP role. Replace the LTP tail resistor with a 10M45S CCS.

BTW, the 12BY7 shown is getting scarce and is (IMO) best reserved for already extant units. I've provided a 6922 cascode, which is quite suitable as a replacement for the 12BY7,
