If I connect the G3 of the 6AS6 to cathode , this pentode can work fine for audio pre-amplification ?

The spec sheet mentions this specifically: connect G3 to the cathode, and use as any other small signal pentode. Whether or not it works as a decent audio voltage amp remains to be seen.

It is a sharp cutoff pentode, so it should be possible. How linear it will be is up for grabs.

You can make it into an electronic volume control if you connect G3 to a variable source of DC, like 0 to -18V or so. See the schematic below:

I believe the 6AS6 is essentially a 6AK5/EF95 with a tighter pitch on g3. That would mean that you have to be careful about grid stoppers etc. as it is happy amplifying/oscillating at UHF.
