Is it possible to Oversize an SE OPT?

Hello, I am looking to build the RH EL84 amp and am sourcing parts.
Is there such a thing as going too big with the output transformers? I was hoping for multiple secondary taps which puts me at the 5K / 15watt Transcendar, Hammond, or Edcore.
I realize I don't want to go too small and affect low end frequency response, but are there penalties if you go to the other extreme? All three of these are huge and seem overkill. (over 10lbs) Will this create any kind of mismatch?
Not sure what specs are important in matching an OPT to tube other than 5k primary (for the RH design) / appropriate secondary tap, max current, and frequency response?

Thanks for the lesson!
