Heater voltage 5v instead of 6.3. is not very critical?
Tube is 6n1 and 6p14

You might get lower noise and lower gain, also lower output. Possibly shorter valve life if too much cathode current is drawn.

If your transformer has enough current you could rectify that 5V.
5 X 1.41 = 7.05 but you lose about a volt across the vectifiers so you would
get ~ 6V .

Rectify using schottky diodes in a bridge and you might get pretty close to 6.3VDC for your filaments. A big cap will be required to get the ripple down to reasonable levels and a pi filter using a low DCR inductor of a few mH might be worthwhile. Nothing worse than ripply DC for filament heating - far worse than AC because of the high dvdt of the ripple voltage - it couples electrostatically into anything nearby and blasts through the cathode insulation..
