confused on power transformer ratings

I have a similar question.

First time buy with a CT 350-0-350.

Using PSUII I need to select Full Wave and insert 350V as the voltage to get around 350 Volts(of course depending on the filtering I choose)?

If I need 700V I would connect the 2 outer cables to a bridge (Centre tap goes to ground?)

Yes, to get 700V out of a 350-0-350 transformer, you need to leave the center tap unconnected, although I'm unclear on what current you could get out of it (no free lunch).

I would expect that if the transformer was rated at 700V CT @100ma, and you used a capacitor input (CLC) filter, you would get roughly 70.7mA at 990V (ignoring losses in the transformer, choke, etc).

If you used a choke input filter you would get about 630V at 110mA.
