where would I find a reasonably priced hook up wire that will be good with voltages up to 500 VDC? Could someone suggest something that doesn't cost an arm and a leg?

ebay: there is usually a large amount of teflon (or similar) silver plated copper wire at very reasonable prices. Good choice of gauges and construction.

DIYer resource extraordinaire McMaster-Carr carries MILSPEC, PTFE insulated, stranded, Silver plated Copper, wire rated for service at 600 VAC. The price for 20 AWG is $0.55/ft.

If you check the prices at Antique Electronic Supply,
the 20AWG solid cloth covered copper wire is 0.18 cents a foot if you buy a 50' roll.
$8.78 for 50', that's a grest price !
