Perhaps the hum comes from saturating transformers as the capacitors charge from 0V?

IMO, most likely hum caused by 1. capacitors charging and 2. tubes heating unevenly, resulting in momentary unequal hum cancellation. (When I pull the 12AX7 it hums again.)
